Christmas Cookies


As you can tell, I made a lot of cookies this year for Christmas. Joy and I estimate that we baked over 300. And by we baked, I mean, I baked. Although, don't get me wrong, she totally helped. She just didn't actually put anything in the oven. =P


We make all these cookies (and cake balls) solely to give away to people as Christmas gifts. I think it's a brilliant idea because 1) I love baking and 2) I love giving gifts. I love how excited and happy people are when they receive a tin of homemade goodies. Delivering them is seriously the best part (and eating the extras is pretty awesome too).


We ran out of room to put them all, too. Our apartment has been a little crowded (messy) lately, because we've all been stressed and busy with exams...some things (like doing laundry), get pushed to the side. Oh, the life of college students.


Nifty trick: the sugar cookies are just dipped in canned icing. I melted it in the microwave so it would get runny and added regular ol' food coloring (all my awesome gel pastes are at home) to make it redish and greenish. After you let them sit for a couple of hours (or over night), they get hard enough to package, but the icing is still soft when you bit into it. So simple, so brilliant. :)


The cake balls are strawberry/chocolate and carrot cake/white chocolate. I LOVE the strawberry. Once again, I went with the convenience of box mixes and canned icing. But with all the hard work that went into them, I'm sure nobody minded.


All in all, it was about a 3 day process. Joy and I did this last year too, and I love that we make a yearly tradition out of it (although she's been doing this for years before she even met me). One of our friends said our apartment looked like a bakery and our roommates and everyone who came by loved that we had extra cookies sitting around to snack on. Merry Christmas everyone!

The Grill Cake: Revisited

Well, I've entered it into a contest. Why? Because I want to win sign memorabilia from Duff Goldman (aka Mr. Ace of Cakes) and his awesome baking products.

Professional Procrastinator

Things are seriously getting hectic at school with the semester only being a quarter of the way through, and as much as I want to make peach flavored cake balls or strawberry kiwi cupcakes, I just don't have time right yet.

But I will. You know I can't go too long without baking or I'll go crazy. :) In the meantime, I'm taking breaks between assignments (read: procrastinating!) to look for wedding cake inspirations.

No, I'm not getting married. I'm just entering a cake competition in March. Hopefully. It really depends on whether or not I can find a design I like.

I've found a few interesting and unique dresses online, but I don't think any of them are "the one." For your viewing pleasure, though, here they are!


This first dress is an Elizabeth Fillmore design. I like how eclectic and different it is. Plus the black/white combo is super classy.

This gorgeous Justin Alexander dress is probably my favorite wedding dress ever. I don't know if that's enough for me to use it as a cake inspiration, but if I was getting married soon and had a couple thousand dollars to throw around, I'd wear something like this. I found it on Bridal Snob first.

And finally, we have a green gown from Vera Wang. Who says wedding dresses have to be white? She looks stunning anyway. And a green wedding cake would be cool and unique too, but how would I translate that gorgeous flowing skirt into fondant and sugar??

I'm still keeping my eye out for the perfect inspiration, and any Floridian cake decorators who are interested in competing, check out the website for info!

Duff Love

Bakerella, I love you.

Why? First of all, because you make adorable cake pops. Secondly, because you live in my favorite city (the ATL) and we shop at the same cake store, and third, because of this post.

Turns out Cake Boss is hosting a cake decorating competition. Yeah, I'm toying with the idea of entering. It would mess with my school schedule though, so that's the one draw back. But seriously, how freaking cool would that be?! I know I've got some skills, I'm told that I'm talented, and I've won competitions before... maybe not baking ones, but how 'bout that second place certificate for winning the Medical Terminology Spelling Bee in 11th grade, eh?

I know that doesn't count. But I still make cool cakes, right?

Anyway, I'm equally, if not more, excited about Duff's new line of products. And I say more excited because a) they're avaliable at Michael's, and b) I don't have to compete with anyone to buy them. (Instant gratification ftw!) Hopefully. Who knows how high the demand will be?

He makes his own fondant. I bet it's expensive. I also bet that it tastes better than the other fondant that Michael's sells.

Ohmygoodness. When is this avaliable in stores? I know I'm babysitting today, but I'm gonna have to drag my brothers out to the shopping center with me. Good thing I haven't spent all my hard-earned pay checks yet!

First of all, I'd like to say, this is an adorable apron! It's got the cupcakes, and the bows... and you remember how I feel about cupcakes and bows and aprons, right?!

G.R.I.L.L.- the Other Clunkers Program


Maybe you have traded in your gas-guzzling clunker for a more fuel efficient model or maybe you are sick of government give-aways. Either way, there is a new clunker program that won't raise your taxes or increase the deficit sponsored by Laura's Lean Beef. I only recently heard of this company that produces hormone-free, humanely-raised beef, but have been really impressed with their commitment to sustainable farming.

Their Grill Replacement Initiative from Laura's Lean (G.R.I.L.L.) invites
website visitors, Facebook fans and Twitter followers to submit pictures and descriptions of their rusty, old, last-gasp grills for a chance to win brand new, stainless-steel, propane-powered replacements. The contest made me think about what you need to have to make a good grill- is it charcoal, is it gas? Do you need a rotisserie or a side burner? What about smokers- do you need one of those too? What would your dream grill be?

Harry Potter Fest


Right now, I'm super stoked about the upcoming Harry Potter movie .

My friends and I are all planning to do see the midnight showing next Tuesday night.  Only nine days away!

You're probably wondering why I am sharing my extreme excitement on my blog.

Don't worry.  I have a reason.

I'm planning on making Harry Potter themed cupcakes (and possibly sugar cookies) for the big event.  (And when I say decorated cupcakes, I don't just mean putting a plastic ring with Harry's face on it like the grocery stores sometimes do. Not that I'm hating on grocery store cupcakes.  Just that I'm a little crazier. :-) ) I'm going to go all out with glitter and fondant and crazy colors and flavors.  It will be cupcaketastic and definitely epic.

So stay tuned for more of my Harry Potter/cupcake/baking adventures!  You'll also probably hear about my Threadcakes entry and a couple other contests I want to enter, but Harry Potter comes first.  I know, I probably sound like a crazy fangirl right now.

Confetti Cake for Kids

With all the chaos that has been going on in my life, from getting a new oven to wrapping up 13 years of public school and finally graduating, I completely forgot that I wrote a review for Elisa Strauss' book Confetti Cakes for Kids.

So, for your reading pleasure, I now present to you my take on a book that is filled with some of the most amazing cakes/cookies/cupcakes by the inspiring Elisa Strauss (who also has a blog, by the way.  You should check it out for more cakey goodness).

First of all, let's start with the pictures.  Maybe because I'm a kid at heart (being only 17, after all) or maybe because the book is written about kid's cakes, but this book is filled with some very colorful pictures, which is always a plus for me.  I can get a little bored reading pictureless cookbooks, but I didn't have to worry about that in CCK.  And speaking of kids, my little brother enjoyed looking through the book with me, so it certainly appeals to everyone young and old.  Hopefully he doesn't expect me to make anything quite so fancy and flawless yet!

You think Confetti Cakes for Kids has an adorable cover?  You can't judge a book by its cover, but in this case, that's OK, because there are lots of charming pictures between the covers.  Like the Quincea�era cake (I wish I had a Quincea�era) and the ice cream cupcakes and the beach pail cupcakes and the iPod cake and the...  Alright, alright, you get the point.  But talk about looking too good to eat (that's actually cake?!)... and these are just the photos!

So once I finally finished gushing over the gorgeous, flawless pictures, I got down to the meat and potatos of the book and started reading.

I am an avid reader and I was not disappointed.  If you've never decorated a cake before, then this book is definitely helpful:  there's all kinds of tips for beginners, as well some tools that you might find useful (like a KitchenAide mixer, maybe?).  And if, like me, you've been doing this for a while, don't worry, you'll find something helpful, too.  Like how to cover a round cake in fondant, something that seems daunting but the instructions are clear and (of course!) the pictures help, too.

Needless to say, there are plenty of recipes, like Confetti Cake's most requested cake flavor: chocolate.  (Mmmm. I would request it too.) And I seriously want to try peanut butter buttercream.  If you, like I, get hungry after reading a recipe book, then your tummy definitely will be rumbling after you read through these recipes.

I could go on and on about the merits of this particular book.  If you've checked out the Confetti Cakes blog (or maybe you're lucky enough to check out the actual bakery in NY) then you know what I'm talking about.  However, I don't want to bore you with my review when you can just read the book yourself: it will be much more satisfying, I'm sure.

Pineapple C{upside-down} Cakes

These cupcakes are so deliciously chocolately, moist, and tropical.  It's like the classic pineapple upside down cake, but better because a) there's chocolate and b) it's a cupcake.  Perfection!

The recipe is really easy too:
  • Melt a 1/3 cup of butter and mix with 2/3 cup packed brown sugar.  Spoon evenly into 24 greased (I love the Pam with flour) muffin tins.
  • Put in a tablespoon of crushed, drained pineapple (20 oz can will be enough) in each muffin tin.
  • Spoon over with the cake batter.  And it's so easy, because you can just use your favorite, yummy cake box (like I used the Betty Crocker Triple Fudge Chocolate).  And, for more pineapple-ness, use the juice that you drained out of the crushed pineapple can in the cake batter.
  • After baking at 350 degrees for 20-25 minutes (depending on your oven), run a knife around each cupcake (just in case so they don't stick) and flip them upside down on wire racks to cool.  Or you could just eat them hot, because they really are that yummy.
  • You could also put a cherry on top, but we don't have any cherries because my youngest brother eats them all.  But it would be a nice touch if you have any cherries around. :-)

Okay...we haven't had a contest in a long, long time...but now the contest is back! This PRIZE is the Star Wars Transformers set shown above: Star Wars Transformers Set Millennium Falcon + Bonus Vehicles! This is where Han Solo and Chewbacca Combine become the Millennium Falcon!

The box has never been opened and here's what it contains: Star Wars Transformers 2-figure Set (Millennium Falcon plus a bonus of two titanium vehicles and Han Solo and Chewbacca mini figures. The set features electronic lights and sounds and you can hear sounds and phrases from the movie!

Hello, Fall!

Last week, Monday to be specific, the fall season began in the northern hemisphere.  And how I envy you, denizens of the southern hemisphere!  Because for you, right now, the temperature is warming up and everyone is begining to step outside after a long winter's hiberation.  For me, alas, it gets colder, ahem, "chillier," everyday and the long winter is now ahead of me, not behind me.  I just want to say that I hate being cold.  The good news in all this tragedy is that Christmas is in three months! ;-)

But fall does provide ample opportunities to bake:  my mom and dad and brother's birthdays, Halloween, Thanksgiving, other people's birthdays, and so on.  Hopefully I'll make a cheesecake sometime this week for my mom's birthday (which is tomorrow) but she says that she'd rather I clean my room as a gift to her...

In the mail a few days ago I got a little mini-magazine from Taste of Home with Halloween recipes.  It was so cute:  my little brother came up to me and said:  you can make something for me for Halloween.  So we flipped through the pictures together, picking out a chocolate cake and pumpkin cookie pops that I should make.  Actually, I think that the pumpkins would be even better if they were cake balls!

So I've got a lot to look forward to baking wise this season.  Hopefully I'll have time to do it all, since at the same time I'm still in school, and I have to apply for all these scholarships and colleges...

All of the other pros are bakeries! Baked and Wired, Nostalgia Cupcakes, The Baltimore Cupcake Company, Sweet N Sassy Cupcakes from Newark, Delaware and more! We all make yellow cupcakes with chocolate frosting, chocolate cupcakes with vanilla frosting and the third one if the "wild card" cupcake...one of your own choosing.

Basil is Better, Chocolate is Best

I now present to you my entry into the Iron Cupcake: Earth September 2008 Competition (secret ingredient: basil)!

First, let me preface the cupcakes with some background.  Earlier in the summer, I planted a plethora of fresh herbs:  spearmint, peppermint, Italian parsley, sweet basil, oregano, and banana peppers (yes, I am aware that banana peppers aren't herbs).  However, the mints never grew. :(  Everything else did, and aside from some wimpy parsley, everything flourished.  As the season went on, I occasionally used my herbs for certain Italian dishes such as lasagna.  But I never really had a reason to eat them.  Then, alas, the weather began to get cool again and I feared that I would have no true purpose for the herbs and they would wither away and die when the frost came.  Was all my hard work for naught?  Should I have just let them die that one week when I completely forgot to water them?

No!

Thanks to Iron Cupcake:  Earth, my herbs have a reason to live again.  At least, the basil does.  So now I finally present to you Kelsie's Chocolate Basil Cupcakes with Cream Cheese Icing:

From Flickr: "Basil is a delicious herb but until this challenge, I never thought of putting it in dessert. When it comes to dessert, though, I'm 100% on the chocolate bandwagon. And so this cupcake was born.

The chocolate-basil cupcake is filled with dark chocolate ganache and topped with cream cheese icing and a sugared basil leave plucked fresh from my garden."

The Cupcake

Ingredients:
3/4 cup dark chocolate cocoa powder (regular is OK too but not as tasty)
1 1/2 cup boiling water
1 1/2 stick unsalted butter
1 1/2 cup granulated sugar
1 1/2 cup fresh sweet basil leaves, packed
1 tbsp pure vanilla extract
2 cup AP flour (all purpose)
1 tbsp baking powder (make sure it's not expired!)
3/4 tsp salt

Preheat oven to 375 F.  Boil the water.  While that's boiling, add sugar and basil to food processor and processor until nice and green, set aside.

When the water is boiling hot, stir together the water and cocoa powder until smooth, set aside. 

Cream together the butter and sugar/basil until light and fluffy.
Add egg and vanilla and beat until smooth.


Add flour, salt, and baking powder and beat until incorporated.

 
Finally, add cooled cocoa mixture and stir until smooth.  
Fill muffin cups (with or without liners) 1/2 full and bake 17-20 minutes (I baked for 20).  

After the cupcakes have finished baking, set aside to cool and continue...

The Ganache

Ingredients:
8 oz whipping cream
1 tbsp butter
1 oz sugar
12 oz chocolate (high quality; I prefer dark)

Heat the cream, sugar, and butter to boiling over the stove.  Pour over chocolate in a stainless steel bowl.  Let stand for 5 minutes.  Stir out from the center until smooth and ganache-like.  Let the ganache cool in the fridge until it is of piping consistency, then pipe ganache into cupcakes.


The Icing

Ingredients:
1 stick room-temperature unsalted butter
1/2 cup Crisco
8 oz softened, room-temperature cream cheese (not the low fat kind)
1 tbsp vanilla
2 lb powdered sugar
1/2 tsp salt.


Cream together the butter, Crisco, and cream cheese.  Gradually add the vanilla, powdered sugar, and salt.  This is a thick recipe so you might have to cut back on the sugar (I did).  This is a very sweet cream cheese icing.  About half the people in my family thought it was too sweet while the other half loved it.  (Funny thing, my mom was one of the ones who loved it, even though she hates sweet icings and desserts.)

I piped the icing on the cupcakes with a 1M (2110) tip and I piped a lot, but then, I like a lot of icing.  So pipe at your discretion.  However, watch out for the ganache, which might be poking back out of the cupcake!

The Sugared Basil Leaves


You need as many basil leaves as you have cupcakes, a food-quality paintbrush, granulated sugar, and corn syrup.  Clean the basil leaves and paint them with the corn syrup (you could dip them in the syrup but then you have a lot of excess) and then dip the leaves into a bowl of sugar.  Gently set the leaf on top of your cupcake, and you're done!

Weather Channel Environmental Essay Contest

I get a lot of email. Even before this blog and that darned Presentation That Shall Not Be Named, I got a lot of email because I'm the technology guy at a large high school with over 2,100 students and about 165 staff members. Email is a natural way for most of those folks to get a hold of me when they need some help. Then when you throw in the email generated by this blog and that presentation, well, I get a lot of email.

I've also been getting quite a few email requests to post certain things on the blog, or offers of advertising, or press releases from various organizations (particularly political organizations trying to influence education policy). For the most part, I ignore all those, because it's hard for me to figure out when I might be crossing a line. (As an aside, I'd be curious about how other education bloggers deal with this - leave a comment or drop me an email.) But this one seems innocuous enough and some folks might be interested in it, so I'll pass it along.

The Weather Channel is hosting a Forecast Earth Summit, a conference for environmental experts and high school students in Washington, D.C. in December, and holding an essay contest to go along with it. From the email I received,

Some Changes and Updates...

First and foremost (it is the most obvious) is this new adorable layout from Gisele Jaquenod.  Her layouts and designs are so cute, aren't they?  (She made the CakeJournal design.  Oh, and CakeJournal is a snazzy place to visit, too.  Louise is quite talented!)  If you like her work enough, you could try entering her contest (like me! :-P).  The "tea and cookies" mug is my favorite... I'm not a big coffee drinker, but I love tea AND cookies.  It's fate. =D

So let's move on to some cake-related sugary goodness.  I bought some new cake pans with my birthday moneyThe good stuff.  The my-cakes-might-actually-turn-out-nice kind of pans.  :) Yay!  (I bought some round 10" cake boards, too.)  But the cake pans.  I am soooo looking forward to puttin' some batter in those babies!

Unfortunately, I don't have an excuse to use my pretty new pans until my dad's birthday in October! (Hillary and Adam both want rectangular cakes, and I have no idea what my mom wants.)  That's a long time to wait... I'll have to come up with a cake idea before then.

(Actually, I thought up a Jonas Brothers cake, but I really don't have a good enough excuse to make it... yet.)

I got a lot of awesome gifts for my birthday involving food/baking/kitchenware.  My grandparents gave me cookie cutters, a digital kitchen scale (I can't even tell you how long I've been asking to have our ancient (antique) scale replaced), and a rectangular cake container (yes, the one with the cupcake tray!)  I also recieved, from LeAnne's family, an oven mitt that said "A messy kitchen is a happy kitchen, and this kitchen is delirious."  =D  (I try, I really do, but, you know...)

I really want to make some cupcakes, too, so that I can carry them around in my snazzy container.  Well, bake sales are coming up soon in school (I think there is one next Tuesday...) so I'll have to make some then.  Cupcakes are also a good excuse to use up any extra icing.  (Which I plan on doing, since I have about a cup or two of that purple icing, plus some green icing in the freezer.)

Although I've got no baking in my immediate future, I am looking forward for that moment when I can take advantage of a cake-making situation and get some bakin' and decoratin' done! :)


Another Update:  Cakes by Kelsie now has a Facebook page.  Just thought I'd let y'all know that I just figured out how to make one of those! =D

Where's the Beef?

I mentioned in an earlier post that I was asked to be a judge of a contest cosponsored by the Junior League of Hampton Roads and Certified Angus Beef Brand, in conjunction with the Michelob Ultra LPGA Open at Kingsmill May 5-11. The Michelob ULTRA Open partners with the Junior League of Hampton Roads to present the "Fairways and Runways" Fashion Show and Luncheon presented by Certified Angus Beef�. A recipe contest that focused on dishes made with Certified Angus Beef was held and the winner's dish was served at the Fashion Show Luncheon.
There were more than 20 entries and they were winnowed down to 5 semifinalists that were prepared for a panel of judges (including me). I took a long lunch from the salt mines (aka nuclear physics lab) and travelled up to the Eagle's Nest Clubhouse at Kingsmill, a treat in itself since it was a sunny day, and the Williamsburg area, and specifically Kingsmill is absolutely gorgeous in the Spring (especially after the 4-5 consecutive days of rain that we have had, greening up the golf courses). Now, I have to admit I am not a big golfer, but I am a big fan of golf courses since they are gorgeous expanses of green grass, sparkling water, and lush woodlands- what's not to like. But the Michelob Ultra Open is really a big deal. Forty-nine of the top 50 women golfers compete in this event, which takes Open organizers a full year to prepare for.

When I arrived, I was met by Jennifer from Certified Angus Beef who introduced me to the other judges, including two members of the Junior League of Hampton Roads (Patty and Rebecca),Nicole Lee, the Sales and Marketing Manager for the Open, the Corporate Executive Chef for Farm Fresh stores Bob Hirasawa and Certified Angus Beef Corporate Chef Scott Popovic. We were given a feedback form for each of the dishes, and one by one they were plated by Chef Scott and brought to us for our opinion. Table conversation centered around, of course food, places and people that the two chefs had cooked with and questions about food blogging and how I got started. In assessing each recipe we looked at how well it showcased the Certified Angus Beef, how easy it was to recreate at home, flavor and originality.

After about an hour and a half of tasting(and great conversation) Jennifer tabulated the results and a winner was chosen. Now you can see and taste for yourself the dishes we judged :

Samantha Bishop � Colorado Flank Steak

The winner according to the esteemed panel of judges was Lisa Moore's Petite Sirloin Tapanade Tapas, a delicious tidbit of beef that is great for a cocktail party or a tapas-style meal. Lisa won $50 a month for the next year in Certified Angus Beef for her recipe as well as having her dish served at the Fairways and Runways event(Lisa and CAB Corporate Chef Scott Popovic, pictured right)
