Lebanese Chicken and Potatoes Recipe

Ingredients
8 cut up chicken pieces
8 medium potatoes, peeled and quartered
salt to taste
ground white pepper to taste
4 cloves garlic, crushed
1/2 cup extra virgin olive oil
1 cup fresh lemon juice
Directions
1. Preheat oven to 425 degrees F (220 degrees C).
2. Place chicken and potatoes in a large baking dish. Season generously with salt and white pepper.
3. In a bowl, stir together garlic, olive oil, and lemon juice. Pour over chicken and potatoes. Cover dish with foil.
4. Bake in preheated oven for 30 minutes. Remove foil, increase heat to 475 degrees F (245 degrees C), and cook until chicken and potatoes are golden, about 30 minutes.

Umm Ali Recipe

Serves: 10 persons
Ingredients
8 pieces croissant or 600 g, medium size, cut into small pieces
3 tablespoons raisins
3 tablespoons desiccated coconut
3 tablespoons flaked almonds, toasted
3 tablespoons pistachio nuts, cracked
1 tin NESTLɮ Sweetened Condensed Milk or 397 g
1 teaspoon vanilla essence
4 cups water or 1 liter
1 cup liquid cream or 250 ml, whipped
Preparation
Combine croissant pieces, raisins, coconut, almonds and pistachio in a baking dish.
Place NESTLɮ Sweetened Condensed Milk , vanilla and water in a large saucepan and bring to boil then remove from heat and pour immediately over the croissant mixture in the baking dish and set them aside for 5 minutes or until croissants absorb the maximum of the liquid.
Place whipped cream in a piping bag and pipe the cream over the prepared mixture in the baking dish.
Place the baking dish in a preheated oven at 200�C using the grill part of the oven and grill for 5 minutes or until the cream topping is golden color. Serve it immediately.

Pistachio Dates Truffles Recipe

Ingredients
1� cups date paste or 300 g
2� cups ground almonds or 250 g
1 tin NESTLɮ Cream or 170 g
1 cup ground pistachio nuts or 100 g
Preparation
In a large bowl, add and combine dates paste, ground almond and NESTLɮ Cream .
Mix all ingredients well until a soft dough forms. Cover and place the mixture in the fridge for 1 hour or to set. Roll the mixture into small balls.
Roll the balls in the ground pistachio and serve.

Baklava with honey syrup recipe

Ingredients (serves 8)
3/4 cup sesame seeds
4 cups (400g) walnuts, finely chopped
1/4 cup ground cinnamon
8 sheets filo pastry
100g butter, melted
Honey syrup
1 small lemon
2 cups white sugar
1/2 cup honey
1 cinnamon stick
6 whole cloves
Method
1. Preheat oven to 200�C. Lightly grease a shallow baking tray.
2. Place sesame seeds in a small, non-stick frying pan over medium heat. Cook, shaking pan gently, for 3 to 5 minutes or until golden and toasted. Transfer to a bowl. Add walnuts and cinnamon. Mix well.
3. Brush 1 pastry sheet with butter. Fold in half crossways to form a rectangle.
4. Sprinkle 1/4 cup walnut mixture evenly over pastry. Starting from one long end, roll up into a log. Brush with butter. Place on baking tray. Repeat with remaining pastry, butter and walnut mixture. Bake baklava for 10 to 12 minutes or until golden. Allow to cool on baking tray.
5. Make honey syrup: Peel 1 large strip rind from lemon. Remove the pith. Juice half the lemon. Place lemon rind, lemon juice, sugar, honey, cinnamon stick, cloves and 2 cups water in a small saucepan over medium heat. Cook, stirring often, for 5 minutes or until sugar has dissolved. Increase heat to high and bring to the boil. Reduce heat to medium-low and simmer gently for 10 minutes or until honey syrup thickens slightly.
6. Pour hot honey syrup over cold baklava. Stand for 30 minutes or until baklava has absorbed syrup. Cut each baklava diagonally into 3 pieces. Serve.

Shish Barak with Yoghurt - How to Make Shish Barak with Yoghurt

Ingredients (Serves 5 persons)
6 cups yoghurt or 1� kg
1 egg yolk, beaten
2 tablespoons corn flour, dissolved in the egg yolk and � cup or 125ml of water
2 cloves garlic, crushed
� cup coriander leaves, finely chopped
2 cubes MAGGI� Chicken Bouillon
� teaspoon white ground pepper
500 g ready-made shish barak
Preparation
Place the yoghurt in a large saucepan and add the MAGGI� Chicken Bouillon cubes with the corn flour. Stir the ingredients well until thoroughly mixed.
Place the pot on low heat until the yoghurt begins to boil. Keep on stirring continuously in the same direction.
Add the crushed garlic and coriander, leave the sauce to simmer while the saucepan is uncovered for 10 minutes.
Meanwhile, bake the shish barak in hot oven until they have a golden color.
Gently add the shish barak to the yoghurt sauce and serve.

Spinach, walnut & feta parcels recipe

Ingredients
400g spinach , washed
butter
� tsp cinnamon
1 � tsp cumin seeds , toasted
200g feta cheese , crumbled
50g walnuts , chopped
1 egg , beaten
9 sheets filo pastry
200ml Greek yogurt
� garlic clove , crushed
baby salad leaves , to serve
pomegranate molasses , to serve (optional)
Method
1. Heat the oven to 190C/fan 170C/gas 5. Wilt the spinach in a little butter, then cool, squeeze out any water and chop. Put in a bowl with the cinnamon, 1 tsp of the cumin, feta and walnuts and season really well.
2. Melt 50g butter in a small pan. Cut the filo sheets in half so you have 18 squareish pieces. Butter 3 sheets on both sides, then lay on top of each other with each one at an angle to make a rough star shape. Put 1/6 of the filling in the middle. Bring up the sides and gather together at the top, squeeze or twist to seal firmly. Repeat with the other 5.
3. Bake for 20-25 minutes until golden and crisp. Mix the yogurt and garlic with the other � tsp cumin seeds. Serve with a dollop of yogurt and a few salad leaves. Drizzle over a little pomegranate molasses to finish, if you like.

Chargrilled chicken with mint & currant couscous recipe

Forgo the Friday-night takeaway in favour of this delicious dish. The combination of currants, coriander and mint give this couscous a Moroccan flavour.
Ingredients (serves 4)
4 (about 700g) single chicken breast fillets
1 tbs olive oil
1 tbs fresh lemon juice
190g (1 cup) couscous
45g (1/4 cup) currants
375ml (1 1/2 cups) boiling water
2 tsp extra virgin olive oil
1/3 cup chopped fresh coriander leaves
1/4 cup chopped fresh mint leaves
Raita
1 x 200g ctn natural yoghurt
1 Lebanese cucumber, halved, deseeded, finely chopped
1 tbs olive oil
1 tbs chopped fresh mint
1 tsp finely grated lime rind
1 tbs fresh lime juice
Method
1. Place the chicken in a large glass or ceramic bowl. Drizzle with the olive oil and lemon juice and turn to coat. Set aside for 5 minutes to marinate.
2. Meanwhile, place the couscous and currants in a heatproof bowl. Pour over the boiling water and extra virgin olive oil. Cover and set aside for 5 minutes or until liquid is absorbed. Use a fork to separate the grains. Stir in the coriander and mint.
3. Meanwhile, to make the raita, combine the yoghurt, cucumber, oil, mint, lime rind and juice in a medium bowl.
4. Preheat a chargrill on high. Cook the chicken for 5 minutes each side or until cooked through. Slice across the grain.
5. Divide the couscous among serving plates. Top with the chicken and serve with raita.
Notes
Chicken pita pockets with raita: Omit couscous, currants, water, extra virgin olive oil, coriander and mint. Divide the thinly sliced chicken and 2 egg tomatoes, sliced, among 4 pita pockets, halved. Top with raita to serve.
Spiced yoghurt chicken salad with mint & potatoes: Omit couscous, currants, boiling water and extra virgin olive oil. Place 500g coliban (washed) potatoes, chopped, in a steamer basket over a saucepan of simmering water. Cook, covered, for 10-15 minutes or until tender. Combine chicken, potato, coriander, mint and half the raita in a bowl. Sprinkle with 2 tbs toasted pine nuts. Serve with remaining raita.
Chicken & yoghurt curry with herb couscous: Omit lemon juice and raita ingredients. Thinly slice chicken. Omit step 1. Heat olive oil in a non-stick frying pan over medium-high heat. Add chicken and 4 tbs korma curry paste and cook, stirring, for 2 minutes or until aromatic. Add 150g natural yoghurt and 100ml water. Simmer for 5-8 minutes or until chicken is cooked. Serve with couscous.

Rice with Tomato Recipe

2 medium onions or 300 g, finely chopped
4 small tomatoes or 400 g, peeled and chopped
1 teaspoon ground turmeric
1 bay leaf
4 whole cardamom pods
1 teaspoon coriander seeds, dried
� teaspoon ground black pepper
2 cloves garlic, peeled
4 cubes MAGGI� Chicken Bouillon
3 cups basmati rice or 600 g
5 cups water or 1250 ml
Preparation
Heat oil in a pot and saut� onions for 6 minutes.
Add tomatoes, turmeric powder, bay leave, cardamom pods, coriander seeds, black pepper, garlic gloves, MAGGI� Chicken Bouillon cubes, and Basmati rice. Mix well and cook for 3 minutes.
Pour water and cover the pot. Cook rice for 20 minutes or until it is well done.
Serving tips : Serve the rice with any grilled fish, chicken or meat dish.

Couscous Recipe - How to Make Couscous

Preparation Time: 5 minutes

Ingredients
2 � Lb wheat semolina
500-750 ml water
1 tsp salt
1 � tsp flour
8 � fl oz vegetable oil
2 large bowls
1 mixing spoon
1 tamis or a large holed sieve
1 steamer
1 fork
Step 1: Boil the water
Pour the water into a steamer and bring it to a boil.
Step 2: Prepare the semolina
In the bowl, very gently mix the semolina, salt and flour with 250ml of water.
Step 3: Pass it through the tamis or sieve
When it is mixed thoroughly pass the mixture through the tamis or sieve.
Step 4: Steam
Place it in the steamer for half an hour.
Step 5: Break the mixture up
Remove the steamed semolina. Place it into another bowl and break it up with a fork to make it fluffy.
Step 6: Add oil and water
Add the oil and about 500ml of water. This should be enough to give a wet texture to the mixture, if necessary, add more water until the required texture is gained. Mix well and let it rest for 10 minutes.
Step 7: Finish cooking the semolina
Return the semolina to the steamer for another 20 minutes to finish cooking it.
Step 8: Serve
Serve hot as a delightful accompaniment to several Moroccan and Middle Eastern dishes. Couscous can be made in advance, so if you prefer, just reheat it in the steamer the next day for an enjoyable compliment to your meal.

Ingredients
4 carrots, peeled and sliced
2 large onions, halved and thinly sliced
3 lb. meaty chicken pieces (breast halves, thighs, and drumsticks), skinned
1/2 cup raisins
1/2 cup dried apricots, coarsely chopped
1 14-oz. can chicken broth
1/4 cup tomato paste
2 Tbsp. all-purpose flour
2 Tbsp. lemon juice
2 cloves garlic, minced
1-1/2 tsp. ground cumin
1-1/2 tsp. ground ginger
1 tsp. ground cinnamon
Hot cooked couscous
Pine nuts, toasted
Fresh cilantro (optional)
Directions
In a 5- to 6-quart slow cooker place carrots and onions. Sprinkle chicken with 1/2 teaspoon salt. Add to cooker; top chicken with raisins and apricots. In bowl whisk broth, tomato paste, flour, lemon juice, garlic, cumin, ginger, cinnamon, and 3.4 teaspoon ground black pepper. Add to cooker. Cover; cook on low-heat setting for 6-1/2 to 7 hours or on high-heat setting for 3-1/2 to 4 hours. Serve in bowls with couscous. Sprinkle with nuts. Garnish with cilantro. Serves 4.

Lamb Stuffed Vine Leaves Recipe

Ingredients (Serves 5 persons)
3 tablespoons olive oil
1 small onion or 100 g, finely chopped
300 g minced lamb
1 clove garlic, crushed
� teaspoon ground cinnamon
1 cube MAGGI� Mutton Bouillon, crumbled
� cup egyptian rice or 150 g
1 medium tomato or 150 g, finely chopped
2 tablespoons fresh parsley, finely chopped
3 tablespoons pine seeds, roasted
50 vine leaves
1 cube MAGGI� Mutton Bouillon, dissolved in 2 cups or 500 ml water
Preparation
Heat the oil in a pan, add onions and cook on medium heat for 3-4 minutes until softened. Add meat, garlic and cinnamon, and cook until the pink color disappears then remove from heat.
Add the crumbled MAGGI Authentic Taste Mutton Stock cube, rice, tomato, parsley, pine seeds and mix well.
To stuff vine leaves: place it on a working board with the dull side and the stem facing you. Place a teaspoon of the stuffing on the lower part of the leaf, fold the outside edges of the leaf towards the center and roll tightly into the shape of a finger.
Line the bottom of a sauce pan with two layers of unstuffed leaves then place the rolled stuffed leaves, alternating the direction of each layer.
Add the dissolved MAGGI Authentic Taste Mutton Stock cube with more water if needed under the top level of the rolls. Place two plates on top to press the vine leaves.
Bring to boil, then lower the heat, cover and simmer for 40-45 minutes until leaves are tender and the rice is cooked.
Serve warm, garnished with lemon slices and sprinkle with their juice.

Quails with Spicy Red Sauce and Cumin Rice

Tasty and easy Arabian gulf main dish - Quails with Spicy Red Sauce and Cumin Rice.
Ingredients
2 tablespoons vegetable oil
8 quails, washed and cut into halves lengthwise
For the rice:
2 tablespoons ghee2 medium onions or 250 g, sliced
1 medium carrot or 150 g, cut into small cubes
2 tablespoons cumin seeds
3 cubes MAGGI� Chicken Bouillon
4� cups water or 1125 ml
2� cups basmati rice or 500 g
For the spicy red sauce:
2 medium tomatoes or 300 g, peeled and pureed
2 tablespoons tomato paste
2 cloves garlic, crushed
1 teaspoon white vinegar
1 cube MAGGI� Chicken Bouillon
� teaspoon chili powder
Preparation
Heat oil in a large pan and fry quail pieces from both sides until they are golden brown in color from outside and cooked from inside (season quail with salt and black pepper before frying). Remove from oil and set aside.
Heat ghee in a pot and saut� onion slices until they become tender. Add carrot and cumin seeds and stir for seconds.
Add MAGGI� Chicken Bouillon cubes and water. Bring to boil with occasional stirring.
Add the rice and stir occasionally to boil again then cover and let it cook on low heat for 15-20 minutes or until rice is cooked.
Meanwhile, combine all sauce ingredients in a medium saucepan, stir to boil then simmer over low heat for 3-4 minutes or until sauce is slightly thickens. Add the fried quail to the sauce and simmer for few minutes.
Place rice in a serving plate and the quails with the sauce on top.

Rice Boukhari with Meat

Ingredients
3 tablespoons ghee
750 g lamb, pieces with bones
3 medium onions or 450 g, chopped
8 cups water or 2 liters
2 cubes MAGGI� Mutton Bouillon
� teaspoon ground black pepper
� teaspoon ground cumin
� teaspoon ground cardamom
3 medium tomatoes or 450 g, pureed
2� cups rice or 500 g, washed and drained
2 medium carrots or 150 g, cut into thin strips and boiled
1 cup mixed fried nuts or 150 g
Preparation
Heat ghee in a large pot, add and brown the lamb meat pieces until golden brown. Add onions and stir from time to time until the they become golden brown.
Add water, MAGGI� Mutton Bouillon , all the spices and the tomato juice. Cover and cook over low heat for 1� hours or until meat is cooked.
When the meat is cooked, add the rice to the meat stock, this should be around 4 cups or 1000ml of stock, cover and cook over low heat for 25 minutes or until rice is cooked.
Place the rice on a large serving dish, place the meat pieces over the rice, and add the cooked carrots over the meat and garnish with the fried nuts or with raisins and shredded carrots.

Chicken Musakhan

Delicious Palestinian Musakhan recipe with Chicken.
Ingredients
1� kg whole chicken, cut into 4 pieces
6 cups water or 1500 ml
� cup olive oil or 185 ml
3 medium onions or 450 g, sliced
1 cube MAGGI� Chicken Bouillon, crumbled
� teaspoon ground black pepper
2 tablespoons sumac
3 tablespoons pine seeds, toasted
6 loaves iranian bread, cut into 20 square pieces 15x15cm each piece
Preparation
Place chicken and water in a large pot and bring to boil. Remove froth as it appears then simmer for 45-50 minutes or until chicken is cooked. Remove chicken and throw away the water. Set aside to cool. Remove and throw bones and skins. Flake chicken to strips and keep aside.
Warm olive oil in a pot; add onions and fry for 5 minutes or until the onions become tender.
Add the prepared chicken strips, crumbled MAGGI� Chicken Bouillon cube, black pepper, sumac and pine seeds. Simmer and stir for 2 minutes or until all are well combined (add salt if it�s needed).
Add some chicken mixture evenly on a center of each piece of bread. Roll bread and place it in a baking dish.
Brush with some olive oil the top of each roll. Bake in a 230�C preheated oven until bread becomes slightly brown in color.

Filo Fingers with Lamb

Ingredients
2 tablespoons olive oil
1 onion or 150 g, finely chopped
1 tablespoon pine seeds or 10 g, toasted
400 g minced lamb
2 cubes MAGGI� Chicken Less Salt Bouillon
� cup water or 60 ml
� cup raisins, chopped
� cup low fat mozzarella cheese or 100 g
2 tablespoons coriander leaves, chopped
2 tablespoons fresh mint, chopped
1 teaspoon ground black pepper
1 packet filo pastry or 375 g
Preparation
Warm olive oil in a pan, cook onion and pine seeds over medium heat for 5 minutes or until golden brown.
Add lamb and cook over medium heat for 5-8 minutes. Add MAGGI� Chicken Less Salt Bouillon cubes and water. Cook for another 3 minutes. Remove from heat and set aside to cool.
Add raisins, Mozzarella cheese, coriander, mint and black pepper to the meat mixture. Stir until well-combined.
Cut each Filo pastry sheet into 3 strips. Add a tablespoon of lamb mixture at one end side of the sheet. Fold the ends and roll to form a finger shape. Brush the ends with water to enclose.
Place fingers on an oven tray and bake in a 190�C hot oven for 15- 20 minutes until golden brown.
Serve with green mixed salad.

Sheikh El-Mehshi Recipe

Delicious Arabic/Lebanese main dish recipe - Sheikh El-Mehshi.
Preparation time : 30 minutes
Cooking time : 50 minutes
serves 8
Ingredients
1� kg eggplants, medium size, peeled and cut into quarters
2 cups vegetable oil, for deep frying
For the stuffing:
2 tablespoons vegetable oil
2 medium onions or 250 g, chopped
� kg minced lamb
2 cubes MAGGI� Mutton Bouillon , crumbled
� teaspoon seven spices
3 tablespoons pine seeds, toasted
For the sauce:
1 clove garlic, crushed
2 medium tomatoes or 300 g, peeled and pureed
� teaspoon seven spices
1 cube MAGGI� Mutton Bouillon
2 tablespoons tomato paste
2 cups water or 500 ml
Preparation
Slit the eggplant down the middle. Heat the oil (reserve 2 tablespoons of oil) and deep fry the eggplant until they are golden brown in color. Remove and set aside on a kitchen towel to absorb any excess oil.
Heat the reserved 2 tablespoons of oil in a large pan, add onion and cook until tender. Add the minced lamb and stir until cooked and brown in color. Add the crumbled MAGGI� Mutton Bouillon cubes, Arabic seven spices and pine seeds and stir to combine well.
Combine all sauce ingredients in a small saucepan and bring to boil. Simmer over low heat for 5 minutes. Remove from heat and set aside.
Stuff the prepared eggplant with the meat mixture and place them over a large baking dish. Pour the sauce over. Cover with aluminum foil and bake in a preheated oven at 250�C for 30 minutes.
Serve hot with vermicelli rice.
Cooking tips : Place round slices of tomato and green bell pepper over each stuffed eggplant before baking.

Shakreyah Recipe

Delicious Lebanese traditional main dish - shakreyah recipe.
Preparation time : 25 minutes
Cooking time : 1 hour, 30 minutes
Serves 6
Ingredients
300 g lean beef, cut into large cubes
18 baby onions, peeled
4 cups low fat yoghurt or 1000 ml
2 cubes MAGGI� Chicken Less Salt Bouillon, crumbled
1� tablespoons corn flour
1 egg white, lightly beaten
1� tablespoons olive oil
1� tablespoons garlic, crushed
2 tablespoons fresh mint, chopped
2 tablespoons coriander leaves, chopped
Preparation
Boil beef cubes and baby onion in two separate saucepans until they are cooked.
Meanwhile, combine low fat yogurt, the crumbled MAGGI� Chicken Less Salt Bouillon cubes, corn flour and egg white in a separate saucepan and place over a medium heat with constant stirring until it boils. Remove and set aside.
Warm olive oil in a small pan-fry and saut� garlic until fragrant then add mint and coriander and stir for a seconds. Pour over the yogurt mix and stir.
Drain the cooked beef and baby onion and pour them over the yogurt mix. Stir and serve with steamed rice.

Baked kibbeh

Delicious traditional Lebanese baked kibbeh recipe.
Preparation Time 40 minutes
Cooking Time 35 minutes
Ingredients (serves 4)
120g (2/3 cup) Naytura Cracked Wheat
400g lamb mince
1 brown onion, coarsely grated
2 tbs chopped fresh mint
1/2 tsp ground allspice
2 tsp toasted pine nuts
1/4 tsp sumac
Olive oil, to grease
Natural yoghurt, to serve
Lebanese bread, to serve
Lemon wedges, to serve
Cucumber salad
4 Lebanese cucumbers, peeled, quartered lengthways, coarsely chopped
4 tomatoes, coarsely chopped
1/2 red onion, thinly sliced
1/2 cup fresh continental parsley leaves
1 tbs fresh lemon juice
2 tsp extra virgin olive oil
1 garlic clove, crushed
Method
1. Place cracked wheat in a heatproof bowl. Cover with boiling water. Set aside for 15 minutes. Drain through a fine sieve, pressing to remove excess moisture.
2. Place 350g mince and half the onion in a large bowl. Add the cracked wheat, mint and half the allspice, and season with salt and pepper. Use wet hands to mix until well combined.
3. Cook remaining mince in a non-stick frying pan over medium-high heat, stirring with a wooden spoon to break up any lumps, for 2 minutes or until mince changes colour. Add the remaining onion and cook for 2 minutes or until the mince is cooked and the onion is soft. Stir in the pine nuts, sumac and the remaining allspice. Season with salt and pepper. Set aside to cool completely.
4. Preheat oven to 200�C. Brush a baking tray with oil to grease. Divide the cracked wheat mixture into 16 even portions. Roll 1 portion into a ball. Holding the ball in the palm of your hand, press your index finger into the centre of the ball to make a cup shape. Place 1 teaspoon of the pine nut mixture in the cavity. Bring the edges together to seal, then roll into a slightly elongated egg shape. Repeat, in 15 more batches, with the remaining cracked wheat mixture and pine nut mixture.
5. Place the kibbeh on the prepared tray. Bake in oven, turning halfway through cooking and brushing occasionally with juices, for 30 minutes or until cooked.
6. Meanwhile, to make the cucumber salad, combine the cucumber, tomato, onion and parsley in a bowl. Whisk together the lemon juice, oil and garlic in a small bowl. Season with salt and pepper. Add the lemon dressing to the cucumber mixture and toss to combine.
7. Serve the kibbeh balls with cucumber salad, yoghurt, bread and lemon wedges.
Notes & tips
You can also serve these kibbeh balls as part of a mezze meal, which is a favourite in Lebanon. This "grazing" meal consists of a series of small dishes that are set out for guests to nibble on. Simply halve the size of the kibbeh and reduce the cooking time to 15 minutes. Serve with hummus, baba ghanoush, labne and Lebanese bread for a magnificent meal.
Freezing tip Cool at the end of step 5. Freeze in an airtight container for up to 2 months. Thaw overnight in fridge. Preheat oven to 200�C. Place kibbeh on a baking tray in oven until heated through.
