Thank God for sweet grapes! ( Day 1)

The 5 day diet.

It hasn't even been 1/2 a day and I'm already fighting my cravings for a slice of bread! Haha. It's a good thing that bread wasn't on our grocery list last week!
Lunch:
An extremely bitter mixture of gourmet lettuce with a dash of balsamic vinaigrette and grapes. *sigh* the lettuce I bought at the supermarket this week was probably the worst I've ever tasted! Haha What a way to start the diet! If it weren't for the grapes; I probably would have starved all afternoon! *laughs*I popped over to my beloved gym in the afternoon for an hour of pilates; felt pretty good on the way home; but as I entered the kitchen to start off with dinner preparation, all hell broke loose!!! I couldn't contain my hunger as I chopped, diced and handled the chunks of meat and vegetables! Haha I had to grab a couple of carrot sticks and cashew nuts to calm my stomach down.

Dinner: Pan fried chicken breasts marinated in Tarragon served with roast pumpkin, steamed asparagus and a tomato based puree.
Meat:
3 slices chicken breast marinated with 2 tsp salt, dashes of pepper and 1 tsp chopped tarragon leaves.
Pan fry on a non-stick skillet till cooked thru. Set aside and keep warm.
Sauce:
1 onion sliced
3 cloves garlic chopped
2 large tomatoes

1 can tomato puree
1 tbsp capers
1 tsp sea salt
cracked pepper
tabasco sauce(comes in handy for something a little spicy)
Cook all ingredients in a deep non stick pan and simmer till tomatoes soften and sauce is thick. Season with salt and pepper. Spoon over cooked pieces of meat.
Butternut Pumpkin: Cook pumpkin chunks in a microwave steamer for 5-8 minutes. Remove and grill in preheated 200 degree oven for 15-20 minutes or until corners are brown and centers are soft.
Asparagus: Wash, drain and rub lightly with salt. Cook in the microwave for 3-4 minutes till bright green and tender.
Taste Verdict: wasn't as bad as the lunch; but I guess it tasted alright. I'm not a fan of 'light' meals and this was probably one of the best greaseless meal I've ever eaten. *sigh* I remember trying hard to resist reaching out to the bottle of olive oil to pour in a little drop, I could hear it calling to me!!! Half way through my cooking; I grabbed it and shoved it into the pantry out of sight! Haha..I think diets drives my screws a little loose!
