"Don't Make Me Release the Flying Monkeys" Halloween Cupcakes with Orange Frosting...and a little blood...

Roxanne: These are for you!

What can I say...I love Halloween and really look forward to these nutty set-ups I create...all meant in fun!

The cupcakes themselves are relatively unimportant in this case...it's all about the decorating...however, the folks I work with at UMD thought they tasted great...should I say the obvious? They were DEVIL'S FOOD cupcakes!


Enjoy the photos...let yourself go a little crazy this Halloween...take a walk on the wildside!

Champagne Cupcakes with Kir Royale Frosting

Champagne Cupcakes with Kir Royale Frosting


Layla is watching this cupcake very closely! The recipe for this cupcake is from Crazy About Cupcakes by Krystina Castella.

Champagne Cupcakes with Kir Royale Frosting


When I made the frosting I added some Creme de Cassis to the champagne to make it more like a Kir Royale...my fav drink!

Here's the recipe:

Champagne Cupcakes (I got 20 cupcakes out of this recipe)

Ingredients:
2 3/4 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
2/3 cup butter
1 1/2 cups white sugar
3/4 cup champagne (the sweeter the better � even strawberry would be great!!)
6 egg whites

Directions:
Preheat oven to 350 degrees F (175 degrees C). Prepare a cupcake pan with liners.

In a large bowl, cream together butter and sugar until very light and fluffy. Sift flour, baking powder, and salt together, and then blend into creamed mixture alternately with champagne.

In another large clean bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into batter to lighten it, then fold in remaining egg whites. Fill the cupcake liners about 2/3 full.

Bake at 350 degrees F (175 degrees C) for 20 minutes, or until a toothpick inserted into the cake comes out clean.

Champagne Buttercream Icing

Ingredients:
3/4 cup vegetable shortening
1-1/2 sticks of unsalted butter, room temperature
3 tablespoons champagne (I did two tablespoons champagne and 1 tablespoon Creme de Cassis)
4-1/2 cups confectioners' sugar

Directors:
In a large bowl beat the shortening and butter until combined. Add the champagne. Slowly add the confectioners' sugar and beat until smooth. If necessary, add additional champagne to achieve desired consistency.

Return to Those Mint Julep Cupcakes for the Kentucky Derby!



I've had a very interesting week that I can't tell you about yet...lots of interesting things are happening but I can't discuss them yet...but they could be really cool!




So, back to cupcakes...May 5th is my Mom's birthday...Happy Early Birthday, Ma!

These cupcakes are for the Kentucky Derby. They are from the new Cupcakes Galore book. The frosting is different than any I've made before but was fun to do, and in the end, worked out well. The frosting has Mint Julep in it and the cupcake recipe called for bourbon! Wee Doggies...it's going to be some party...I mean race!

Go Horses!

Super Duper (GO GIANTS!) Chocolate Overload Cupcakes


Dark chocolate cupcakes with mini-marshallows, mini-chocolate chips and Godiva Chocolate Liquor with Godiva Chocoalte Liquor Frosting!

This all started out with a double chocolate cake mix! Then I just went cupcake crazy...adding a box of instant chocolate pudding, a cup of yogurt, mini-marshmellows, mini chocolate chips...well, you get the picture, right?




They were so moist and, OMG...chocolat...E! I made Laura take them to her office...I COULD NOT have them around the house. There's just something about chocolate.



And, Layla...what can I say about Layla...she is such a good doggie. I had had had to give her a big kiss after this photo shoot because you know dogs cannot have chocolate...I did, however, give her some pieces of sliced apples which to her seem to have the same affect that chocolate has on me....drool!


Stay Tuned for next week...big contest announcement...for Starwars Transformers...what does that have to do with cupcakes...not a thing...well, maybe a little thing.

Special SHOUT OUT this week to my sister, Robin...she's havng a relationship crisis right now...so, if you see, give her a BIG hug!
