Ingredients:
6 hard boiled eggs, cut in half lengthwise
2 anchovy filets (packed in oil and blotted dry)
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
2 tablespoons minced fresh Italian parsley
1/4 teaspoon smoked paprika
salt
pepper
capote capers for garnish
Directions:
Place the yolks, anchovies, spices and condiments in a blender (I used my Vita-Mix)or food proccessor. Pulse until smooth.
Divide the mixture evenly among the halves. Garnish with a a caper.
